Walking into the Grand Hyatt Kuala Lumpur’s Poolhouse that evening felt a little like wandering into a parallel Bangkok. Not the chaotic, traffic-humming version, but a beautifully distilled snapshot of its flavours, energy, and spirit. The moment the first dishes arrived, I realised this wasn’t just another pop-up. It was a conversation between two culinary worlds: Thai flavours shaped by Michelin-level precision, and Malaysian craft beers brewed with personality.

This is the Err by Bo.lan takeover, now extended until February 2026, and KL diners are in for something special.

Err by Bo.lan is the more relaxed sibling of Michelin-starred Bo.lan in Bangkok, founded by legendary chef duo Bo Songvisava and Dylan Jones, who built their reputations on deeply flavourful Thai cooking and sustainable kitchen practices long before it became a buzzword. Where Bo.lan is precise and polished, Err is cheeky, approachable, and unafraid to serve punchy Thai flavours with playful twists.

The name itself, “Err” says it all: a wink, a shrug, a sense of fun you can taste.

Seeing that spirit translated into Grand Hyatt KL’s Poolhouse was delightful. Surrounded by greenery and natural light, it almost felt like dining at a tropical Thai canteen curated by Michelin minds.

A Pop-Up Worth Visiting, Even If You’re Not a Beer Drinker

The evening menu was a special collaboration with PaperKite, a rising Malaysian craft beer brewer known for beers with character, not pretense. I honestly didn’t expect Thai dishes and beer pairings to work this well, but things got deliciously interesting fast.


Course 1: Light, Bright & Refreshing

The meal opened with Chicken Mousse-stuffed Crispy Chicken Cakes and a Citrus Salad with Green Mango small bites, big freshness. Paired with PaperKite’s Hoppy Lager, it was an easy, uplifting start. The lager’s crispness perfectly complemented the citrus and herbs.

Course 2: A Golden Fried Duo

Then came the good kind of temptation: Deep-Fried Squid and Fried Beef Short Ribs. The crunch, the savouriness, the oil-kissed edges. Everything begged for a drink to balance it.

Enter PaperKite’s Pale Ale, with its clean citrusy notes cutting right through the richness. Paired together, it felt like a bold street snack moment elevated for hotel dining.

Course 3: A Gold-Winning Beer Takes the Spotlight

When the Copper Ale appeared, everything shifted. Recently awarded a Gold Medal at the 2025 World Beer Awards, it brought warm, malty richness that wrapped beautifully around the next two dishes: Grilled Lamb Chops and Stir-Fried Cabbage with Bo.lan’s signature fish sauce.

The lamb soaked up the Copper Ale’s depth, while the cabbage, humble yet full of personality, tasted even sweeter and more fragrant with each sip.

The Finale: A Show-Stopping Jungle Curry

Then came the dish that stole the night: a Mountain Jungle Curry crowned with melt-in-your-mouth braised and grilled beef. The aroma alone announced its arrival before it even hit the table - herbal, fiery, deeply Thai. Paired with PaperKite’s zesty, citrus-forward IPA, the curry became a full sensory experience. The heat danced, the beef calmed, the hops cut through… it was a harmony I didn’t know I needed. Alongside it came Stir-Fried River Prawn with Salt & Chili and a delightful Deep-Fried Egg Salad, both of which played beautifully with the IPA’s tang.

By this point, I realised something: Thai food and craft beer are meant to be together. Who knew?

Even without the beer pairings, Err by Bo.lan’s dishes stand strong on their own. They’re familiar but sharp, comforting but full of cheeky surprises, all rooted in sustainability and tradition. The PaperKite collaboration adds a layer of storytelling that’s unexpected, local, and fun. It’s not often you get a Michelin-rooted Thai kitchen teaming up with Malaysian craft beer in a KL hotel.

But that’s exactly what makes this takeover special.
